Healthy Spiced Apple Crumble

Preheat your oven to 350°F (175°C). Peel, core, and slice 5–6 medium apples, such as Granny Smith or Honeycrisp. In a large bowl, toss the apples with 2 tablespoons of maple syrup or honey, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, ½ teaspoon vanilla extract, and 1 teaspoon lemon juice. Spread the apple mixture evenly in a greased 8×8-inch baking dish.
For the crumble topping, mix ¾ cup old-fashioned oats, ¼ cup whole wheat flour or almond flour, 2 tablespoons coconut sugar or brown sugar, 2 tablespoons melted coconut oil or unsalted butter, ½ teaspoon cinnamon, a pinch of salt, and ¼ cup chopped nuts if desired. Stir until the mixture is crumbly, then sprinkle it evenly over the apples.
Bake for 30–35 minutes, until the topping is golden and the apples are tender. Serve warm with a dollop of Greek yogurt or a small scoop of vanilla frozen yogurt if desired.
