Delectable Stuffed Peppers
These stuffed peppers are perfect for a summer night out on the porch! They are filling and hearty, but still healthy! Serve with a mixed greens salad and roasted sweet potatoes for a complete meal.
- 1 clove garlic, minced
- 1/2 onion, chopped
- 1/2 pound ground beef
- 3 bell peppers, cut in half lengthwise with inside removed
- 2 tablespoon olive oil
- 1 15-ounce can fire-roasted tomatoes (drained / you only need to use half)
- 1 cup cooked rice
- 1/2 tablespoon oregano or blended Italian spices
- 2 cups baby spinach
- 1/2 cup shredded cheese
