Delectable Stuffed Peppers

These stuffed peppers are perfect for a summer night out on the porch! They are filling and hearty, but still healthy! Serve with a mixed greens salad and roasted sweet potatoes for a complete meal.

  • 1 clove garlic, minced
  • 1/2 onion, chopped
  • 1/2 pound ground beef
  • 3 bell peppers, cut in half lengthwise with inside removed
  • 2 tablespoon olive oil
  • 1 15-ounce can fire-roasted tomatoes (drained / you only need to use half)
  • 1 cup cooked rice
  • 1/2 tablespoon oregano or blended Italian spices
  • 2 cups baby spinach
  • 1/2 cup shredded cheese
