Healthy Pumpkin Granola

This high-fiber granola is perfect for a cozy fall breakfast or snack!

Plus, it’s Vegan and Gluten-free.


3 Cups of Gluten-Free Rolled Oats

1.5 Cup of Pecans

3 TBS of Flaxseed Meal

2 TBS of Almond Butter

½ TSP of Sea Salt

1 TSP of Pumpkin Pie Spice

½ Cup of Coconut Oil

¼ Cup of Pumpkin Puree

½ Cup of Maple Syrup of Agave Nectar


  1. Pre-Heat oven to 350 degrees Fahrenheit.
  2. Mix together oats, pecans, flax, pumpkin pie spice, and salt.
  3. Over low heat, mix together almond butter, coconut oil, maple syrup, and pumpkin puree.
  4. Combine the warmed ingredients with the liquid and mix together.
  5. Spread the granola over a sheet pan.
  6. Bake for 30 minutes or until crunchy, mixing occasionally.
  7. Let it cool.
  8. Enjoy!
