Lemon Tortellini Soup

3 tablespoons olive oil1 onion, chopped2 medium carrots, peeled and chopped3 celery stalks, chopped2 cloves garlic, minced1 teaspoon salt1/4 teaspoon pepper2 lemons4 cups low-sodium vegetable or chicken broth1 package frozen tortellini1 (6-ounce) bag spinach Direction: In a medium-sized dutch oven, add your oil, onion, and garlic. Simmer until the onions are translucent.Add your carrots and celery and saute for 3-5 minutes.Sprinkle in your salt and pepper.While your veggies are cooking in the dutch oven, juice your lemons in a small bowl. Also, zest one of your lemons.Add the zest into your dutch oven.Add the broth and tortellini and bring to a boil.Boil until the tortellini is cooked through - about 5 minutes.Reduce heat to low and add in your spinach and lemon juice.Serve with grated parmesan! ...

This delectable Mediterranean Couscous Salad recipe is the perfect side-dish or can be served as a main course and topped with your protein of choice! Christmas Morning Casserole

Ingredients: 1 pound of breakfast sausage10 pieces bacon, cooked and diced up9 large eggs2 1/2 cups of milk1 tsp ground mustard1 tsp salt1/2 tsp paprika1/2 tsp black pepper6 slices of sourdough, tear into pieces1/2 cup shredded sharp cheddar cheese1 cup shredded gruyere cheesesour cream, chives, etc (optional as a garnish) Recipe: In a skillet, cook and crumbled your breakfast sausage and set aside. 1 Tablespoon olive oil1 onion, diced2 garlic cloves, minced3-4 carrots, sliced2 celery stalks, diced6 links of mild Italian sausage - remove the casings5.5 cups of chicken broth 2 cans of white beans (15oz), rinsed and drained3 large leaves of kale - roughly chopped into piecesSalt and pepper Heat the olive oil in a large pan and add the onion, celery, carrots, and cook until the onions are translucent and the other vegetables become tender.
